Hearty and delicious, this easy crock-pot version of bbq beef brisket is sure to be a crowd pleaser.

Prep in 20 minutes and then walk away while your meal cooks to perfection.

INGREDIENTS

3 medium onions, sliced
5 lb beef brisket
4 T cooking oil

Rub:
2 T flour (optional, but helps thicken the sauce)
1 t salt
½ t pepper
2 t paprika
1 t garlic powder
½ t cumin
1 t mustard

Brisket Sauce:
4 garlic cloves, minced 
½ c cider vinegar 
1.5 cups ketchup
½ c brown sugar, packed 
2 t pepper
2 t onion powder
2 t mustard
1 t cayenne pepper*
2 T Worcestershire

DIRECTIONS
Combine rub ingredients in a large bowl.
Mix brisket sauce ingredients in another bowl.
Dredge both sides of the beef brisket in rub mixture
Add 2 T olive oil to a large pan and saute onions on medium heat about 10 minutes until they start to caramelize.
Transfer onions to the bottom of the slow cooker.
Add remaining 2 T olive oil to the pan. Brown brisket 4-5 minutes per side.
Place the brisket in the slow cooker. Cook on low for 8-10 hours (depending on how low your slow-cooker cooks. We cooked ours for 8 hours and the brisket reached 200 degrees).
Transfer brisket to a cutting board (ideally with a trough) and allow to rest 20 minutes.
Strain sauce through a colander or medium-meshed (not fine) sieve. Note: Straining is not required but it yields a nice smooth textured sauce.
Reduce sauce over medium heat until it thickens.
Slice brisket, thinly against the grain and platter. Drizzle barbecue sauce over the brisket and serve.
* Add additional cayenne if you like your sauce to be spicier.
