2 oz of BRAZIL NUTS, shelled and chopped until they just reach a bread crumb texture (Do not over chop)
1 small onion
3 garlic cloves
2 T coriander seeds
2 T brown sugar
pinch red pepper flakes
1/3 cup soy sauce
3 T lemon juice
Cut onion into quarters and add to chopper with garlic, coriander, and sugar; finely chop.
Transfer mixture to a large bowl with the chopped nuts, lemon juice, and red pepper; stir in soy sauce.
Marinade should be thick but not pasty. If it is too thick, add a few tablespoons of water or soy sauce.
Add pork cubes and stir to coat them evenly.
Cover and marinate for 3 hours or longer. Place pork on pre-soaked wooden skewers and bring to room temperature before cooking on a preheated grill, about 4-5 minutes per side (16-20 minutes total)
